Gnocchi alla Sorrentina

Gnocchi alla Sorrentina is a classic Italian baked pasta dish made with homemade gnocchi, tomato sauce, mozzarella, and Parmigiano Reggiano. A comforting and traditional recipe from southern Italy.

Ingredients
  

Homemade Gnocchi
  • see linked recipe
  • 2 lbs russet potatoes
  • 2 –2½ cups 00 flour
  • 1 egg
  • Salt
  • Semolina
Tomato Sauce
  • 1 jar passata di pomodoro
  • or San Marzano tomatoes, passed
  • 1 small onion finely diced
  • 4 tbsp butter
  • 3 –4 basil leaves
  • Olive oil q.b.
  • Salt & pepper q.b.
Assembly
  • Homemade gnocchi
  • 1 whole mozzarella torn or cubed
  • ½ cup Parmigiano Reggiano
  • Fresh basil

Method
 

Make the Tomato Sauce
  1. Heat olive oil in a saucepan over medium heat. Add the diced onion and season lightly with salt and pepper.
  2. Cook until soft and translucent.
  3. Add the butter and allow it to melt.
  4. Stir in the passata and basil.
  5. Let the sauce simmer gently for 45 minutes to 1 hour, stirring occasionally.
Cook the Gnocchi
  1. Bring a large pot of salted water to a boil.
  2. Add the gnocchi and cook until they float, about 1–2 minutes.
  3. Transfer directly into the tomato sauce using a slotted spoon.
Assemble
  1. Preheat oven to 450°F.
  2. Spread a layer of tomato sauce on the bottom of a baking dish.
  3. Add half of the gnocchi, then top with mozzarella and Parmigiano.
  4. Repeat with remaining gnocchi, mozzarella, and Parmigiano.
  5. Bake for 5–10 minutes until melted and bubbling.
  6. Finish with fresh basil and serve immediately.
