Grandpa's One-Pan Sausage and Potatoes

This one-pan sausage and potatoes recipe is a classic Italian-American comfort dish made with sausage, Yukon gold potatoes, onions, and plum tomatoes baked together until tender and full of flavor.

Ingredients
  

  • 1 large onion
  • 3 medium Yukon gold potatoes
  • 1 28 oz can plum tomatoes
  • 1 dozen sausages mix of hot & sweet
  • ¼ cup white wine
  • ¼ cup grated Parmigiano
  • Olive oil q.b.
  • Salt q.b.
  • Black pepper q.b.

Method
 

  1. Preheat oven to 375°F.
  2. Thinly slice the onion and cut the potatoes into medium chunks.
  3. Add the onions and potatoes to a baking pan. Drizzle generously with olive oil, season with salt and pepper, and toss to coat evenly.
  4. Crush the plum tomatoes by hand, leaving some texture. Season with salt and pepper, then pour over the potatoes and onions. Mix everything together.
  5. Nestle the sausages on top of the mixture.
  6. Add the white wine, sprinkle the Parmigiano over the top, and finish with another drizzle of olive oil.
  7. Bake for 1 hour and 15 minutes, flipping the sausages and mixing the vegetables halfway through.
  8. Increase the oven temperature to 425°F and bake for an additional 10–15 minutes, until the sausages are golden brown.
  9. Serve with crusty Italian bread.
