Ingredients
  

  • 5 medium red potatoes about 2 pounds
  • 2 vine-ripened tomatoes cut into wedges
  • 2 tablespoons capers drained
  • cup Mediterranean olive mix green and black olives, pitted
  • ½ small red onion thinly sliced
  • 2 tablespoons red wine vinegar
  • ½ cup extra virgin olive oil
  • ½ teaspoon dried oregano
  • ¼ cup fresh basil leaves torn
  • Salt and black pepper q.b.

Method
 

  1. Bring a large pot of generously salted water to a boil. Add the potatoes and cook until fork tender, about 20–25 minutes depending on their size.
