Insalata Pantesca
Insalata Pantesca: A Traditional Sicilian Potato Salad
Insalata Pantesca is a traditional Sicilian potato salad from the island of Pantelleria, made with tender potatoes, ripe tomatoes, capers, olives, red onion, oregano, basil, and extra virgin olive oil.
Unlike creamy American-style potato salads, there is no mayonnaise. The potatoes are dressed while still slightly warm so they absorb the red wine vinegar and olive oil, creating a salad that is fresh, savory, and full of Mediterranean flavor.
The briny capers and olives contrast with the sweetness of the tomatoes, while red onion, oregano, and fresh basil bring everything together.
Insalata Pantesca is best served at room temperature, making it perfect for summer lunches, family gatherings, or as a side dish alongside grilled fish, chicken, or meat.

Why This Version Works
The key to great Insalata Pantesca is dressing the potatoes while they are still slightly warm.
Warm potatoes absorb the red wine vinegar and extra virgin olive oil more effectively than cold potatoes, allowing the seasoning to penetrate rather than simply sitting on the surface.
Adding the vinegar before the olive oil is also important. The acidity reaches the potatoes first, while the oil then coats the ingredients and brings the dressing together.
Allowing the finished salad to rest gives the potatoes time to absorb the dressing while the tomatoes, olives, capers, onion, oregano, and basil begin to flavor one another.
A Taste of Pantelleria
Insalata Pantesca takes its name from Pantelleria, the volcanic Sicilian island located between Sicily and the coast of North Africa.
The island’s cooking reflects its rugged landscape and Mediterranean climate, relying heavily on ingredients that thrive there or preserve well in the heat. Capers are especially important to Pantelleria and are one of the defining ingredients in this salad.
Combined with potatoes, tomatoes, olives, onion, oregano, basil, vinegar, and olive oil, they create a dish that represents the straightforward, ingredient-driven cooking found throughout Sicily.
It is rustic, colorful, and deeply connected to the island where it originated.
Why Capers Matter in Insalata Pantesca
Capers provide the sharp, briny flavor that distinguishes Insalata Pantesca from an ordinary Italian potato salad.
If you are using capers packed in brine, drain them well before adding them. Salt-packed capers should be rinsed thoroughly to remove excess salt without washing away their flavor.
Because olives and capers both add salinity, taste the salad before adding the final amount of salt. The goal is for those briny ingredients to brighten the potatoes and tomatoes without overwhelming them.
Technique & Texture
The potatoes should be cooked until fork-tender but not falling apart. They need to remain firm enough to hold their shape when peeled, cubed, and gently tossed with the remaining ingredients.
Peeling the potatoes while they are still warm creates a smoother texture and allows the dressing to penetrate more effectively.
Thinly slicing the red onion keeps its flavor present without becoming harsh. Letting the finished salad rest for 15 to 20 minutes softens the onion slightly and gives every ingredient time to come together.
The final salad should be moist and well dressed, but never oily or mushy.
Serving Insalata Pantesca
Insalata Pantesca is traditionally served at room temperature rather than cold from the refrigerator.
It works beautifully as part of an antipasto spread, but it is substantial enough to serve as a side dish with grilled fish, roasted chicken, veal, sausage, or other summer entrées.
Because it contains no mayonnaise, it also travels well for picnics, outdoor gatherings, and beach lunches. Just avoid leaving it in direct heat for an extended period.

Ingredients
Method
- Bring a large pot of generously salted water to a boil. Add the potatoes and cook until fork tender, about 20–25 minutes depending on their size.
- Drain the potatoes and allow them to cool just enough to handle. Peel while still warm, then cut into bite-sized cubes.
- Transfer the potatoes to a large mixing bowl. Add the tomatoes, capers, olives, and thinly sliced red onion.
- Drizzle in the red wine vinegar first, followed by the extra virgin olive oil. Season with the oregano, salt, and freshly ground black pepper, q.b., then gently toss until evenly coated.
- Fold in the torn fresh basil and give the salad one final gentle toss.
- Let the salad rest at room temperature for 15–20 minutes before serving. This allows the potatoes to absorb the dressing and the flavors to fully develop.
Chef’s Notes
- Dress the potatoes while they’re still slightly warm—they’ll absorb the olive oil and vinegar much better.
- Use high-quality extra virgin olive oil, as it’s one of the defining flavors of this simple Sicilian salad.
- If your capers are packed in salt, rinse them well before using.
- This salad is best served at room temperature rather than straight from the refrigerator.
Insalata Pantesca Questions
