Pizzette di Sfoglia
Pizzette di Sfoglia: Italy’s Favorite Party Appetizer
Pizzette di Sfoglia are one of those classic Italian appetizers that seem to disappear almost as quickly as they come out of the oven.
Made with flaky puff pastry, seasoned tomato sauce, mozzarella, and fresh basil, they’re simple to prepare but always a crowd favorite.
You’ll find pizzette served at birthday parties, holiday gatherings, aperitivo spreads, bakeries, and family celebrations throughout Italy.
The buttery pastry creates the perfect contrast to the bright tomato sauce and melted mozzarella, making each bite crisp, light, and incredibly satisfying.
Whether you’re entertaining guests or simply looking for an easy appetizer, Pizzette di Sfoglia are always a great choice.

Why This Recipe Works
Great pizzette are all about balance.
Using just enough passata keeps the pastry crisp, while a single cube of low-moisture mozzarella melts perfectly without releasing too much moisture.
Docking only the center of the pastry allows the edges to puff into a beautiful golden border while keeping the toppings neatly contained.
A final drizzle of olive oil adds richness while helping the basil become wonderfully aromatic during baking.
An Italian Bakery Classic
Walk into almost any bakery in Italy and you’ll likely find trays of pizzette sitting beside sandwiches, focaccia, and savory pastries.
They’re especially popular for birthday parties, holidays, school events, and aperitivo because they’re easy to eat and perfect for sharing.
Although every bakery has its own variation, the classic version remains beautifully simple: tomato, mozzarella, basil, and flaky pastry.
Sometimes the simplest recipes become the most memorable.
Perfect for Aperitivo
In Italy, Pizzette di Sfoglia are a natural addition to aperitivo hour, where small bites are enjoyed alongside a glass of wine, a spritz, or a Negroni before dinner. They’re easy to prepare, simple to serve, and the perfect addition to an antipasto spread, making them just as fitting for casual gatherings as larger holiday celebrations.
Why Chilling the Pizzette Before Baking Matters
Cold puff pastry bakes better.
After assembling the pizzette, refrigerating them for 10 to 15 minutes allows the butter inside the pastry to firm back up before baking.
This creates taller, flakier layers while helping the cheese stay centered instead of spreading across the pastry.
It’s a small step that produces noticeably better results.
Technique & Texture
The key is restraint.
Too much sauce or cheese can weigh down the pastry and prevent it from becoming crisp.
Keeping the toppings centered while leaving a clean border allows the pastry to rise beautifully around the edges.
The finished pizzette should be deeply golden, crisp, and light, with just enough tomato and mozzarella in every bite.

Pizzette di Sfoglia
Ingredients
Method
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a small bowl, season the passata with a pinch of kosher salt and freshly cracked black pepper.
- On a lightly floured work surface, gently roll the puff pastry into a larger rectangle, about 10 x 14 inches (or just until it’s about ⅛-inch thick).
- Using a 2½-inch round cookie cutter, cut out approximately 20 circles of puff pastry. Arrange them on the prepared baking sheet, leaving about 1 inch between each one.
- Using a fork, dock only the center of each pastry round several times, leaving about a ¼-inch border around the outside.
- Spoon about 1 teaspoon of the seasoned passata into the center of each round, spreading it slightly while keeping the border exposed.
- Place one small cube of mozzarella in the center of each pizzetta and top with a small basil leaf.
- Lightly drizzle each pizzetta with extra virgin olive oil.
- (Optional but Recommended) Refrigerate the assembled pizzette for 10–15 minutes before baking.
- Bake for 18–22 minutes, or until the puff pastry is deeply golden and crisp and the cheese is melted with light golden spots.
Chef’s Notes
- Don’t overload the toppings. A thin layer of sauce and a small piece of mozzarella keeps the pastry light and crisp.
- Use low-moisture mozzarella for the best texture and to prevent excess moisture.
- These can be assembled a few hours ahead and refrigerated before baking.
- Perfect as an appetizer, cocktail bite, or addition to an antipasto spread.
