Watch How I Make It

Watch how Puff Pastry Asparagus with Prosciutto & Provolone comes together step-by-step.

Why This Recipe Works

Every layer serves a purpose.

Blanching the asparagus first keeps it tender while preventing it from overcooking inside the pastry.

Wrapping the asparagus in prosciutto adds flavor while helping secure the bundle before the provolone creates a second protective layer.

Finally, the puff pastry crisps beautifully around everything, creating contrast between the flaky exterior and the creamy filling.

The Secret to Flaky Puff Pastry

One of the biggest reasons puff pastry fails is that it becomes too warm before it goes into the oven.

Chilling the assembled bundles for 15 to 20 minutes allows the butter inside the pastry to firm back up, helping create taller, flakier layers during baking.

Refrigerating also helps minimize cheese from escaping while the pastry bakes.

It’s a simple step that dramatically improves the finished result.

Why These Ingredients Work Together

Asparagus, prosciutto, and sharp provolone are a classic Italian combination.

The sweetness of the asparagus balances the saltiness of the prosciutto, while the provolone adds richness without overpowering the vegetables.

The buttery puff pastry brings everything together while creating the crisp texture that makes these bundles so satisfying.

Using high-quality ingredients allows each component to shine.

Technique & Texture

Patting the asparagus completely dry after blanching is essential.

Any excess moisture can soften the pastry and prevent it from becoming crisp.

Using wider strips of puff pastry also helps fully enclose the cheese, reducing leakage during baking while creating a more even golden crust.

Even if a little cheese escapes, it often becomes one of the best parts—forming crispy golden edges around the pastry.

Servings: 8 bundles
Course: Appetizer
Cuisine: Italian

Ingredients

  • 1 sheet all-butter puff pastry thawed
  • 1 bunch of asparagus spears ends trimmed
  • 8 slices prosciutto di Parma
  • 8 slices sharp provolone cheese
  • 1 large egg beaten

Method

  1. Bring a large pot of salted water to a boil. Blanch the asparagus for 2 minutes, then immediately transfer to an ice bath to stop the cooking. Drain well and pat completely dry.
  2. Roll out the puff pastry on a lightly floured surface and cut it into 8 wide strips. The strips should be wide enough to wrap around the asparagus bundle with a slight overlap.
  3. Working one at a time, wrap 3 asparagus spears diagonally with a slice of prosciutto.
  4. Lay a slice of provolone on the work surface and place the prosciutto-wrapped asparagus bundle on one end. Roll the cheese around the bundle.
  5. Place the bundle at one end of a strip of puff pastry and roll it diagonally until completely enclosed. Arrange the seam-side down on a parchment-lined baking sheet.
  6. Brush each bundle generously with the beaten egg.
  7. Refrigerate the assembled bundles for 15–20 minutes to allow the puff pastry to firm up. This helps the pastry hold its shape and reduces cheese from leaking during baking.
  8. Bake in a preheated 400°F oven for 20–25 minutes, or until the puff pastry is deeply golden brown and crisp.
  9. Let cool for 3–5 minutes before serving.

Chef’s Notes

  • Pat the asparagus completely dry before assembling to keep the pastry crisp.
  • Use wide strips of puff pastry so the bundle is fully enclosed. This also helps keep the cheese from escaping as it bakes.
  • Bake directly from the refrigerator if you’ve assembled them ahead of time for the flakiest pastry.
  • A little melted cheese escaping during baking is completely normal and creates delicious crispy edges.

Why blanch the asparagus first?

Blanching keeps the asparagus tender while preserving its bright green color.

Can I substitute another cheese?

Yes. Fontina or mozzarella can work, but sharp provolone provides the best flavor.

Why refrigerate before baking?

Cold puff pastry creates taller, flakier layers and helps reduce cheese leakage.

Can these be served as a side dish?
